General Manager Food & Baverage

We are PT Lotte Shopping Indonesia / Yorihada Kitchen seeking a dynamic and experienced General Manager Food Innovation / Head Chef to lead our Kitchen & Culinary Operations.
This role is pivotal in ensuring consistent food quality, kitchen efficiency, and smooth operational performance across multiple Outlet & Units.
You will be responsible for overseeing head chefs, kitchen teams, and centralized production to deliver excellence in every dish.Key ResponsibilitiesLead and manage day-to-day kitchen operations across all Store & Units and central kitchen facilities.Oversee executive chefs and kitchen managers to maintain high culinary standards and food consistency.Ensure adherence to hygiene, safety, and quality standards (HACCP or equivalent).Develop and implement SOPs for food preparation, portioning, and inventory control.R&D, Procurement, and Supply Chain to ensure kitchen readiness and menu execution.Monitor kitchen KPIs including food cost, prep time, wastage, and staff productivity.Provide strategic input for expansion plans, kitchen scalability, and cost optimization.RequirementsMinimum 7 years of experience in F&B operations with at least 3 years in a senior leadership role managing kitchen/culinary operations.Strong background in central kitchen management, multi-outlet or Store coordination, or cloud kitchen operations.Deep understanding of culinary processes, kitchen workflow, and food production systems.Exceptional leadership and communication skills; able to lead both corporate and kitchen teams.Understand various types of cuisine, especially Korean, Japanese, Sushi, Indonesian, Asian and WesternBachelor's degree in Hospitality, Culinary Arts, Business Management or equivalent.Willing to travel and perform branch visits when needed.PreferredExperience working in fast-paced F&B chains or large-scale restaurant groups.Certification in food safety or culinary arts is a plus.Retail & Consumer Products More than 10,000 employeesPT Lotte Shopping Indonesia and PT Lotte Mart Indonesia are subsidiary companies of Lotte Group, one of the Top Five biggest groups with diverse businesses in Korea** and one of the leading multinational retail companies in Indonesia.
